    Kidney Soup!

    Picture
I read an article on google this morning, about a food bank in Britain who had received a donation of tinned food dating back to the year I was born, 1971. One of the items was a tin of Heinz Kidney Soup; I am unsure as to whether or not I had any as a kid, but known my parents, I probably did. I am a big fan of offal, eating plenty of it during the austere 1970s, so I decided to find out a little more about this tinned soup.

Heinz no longer produce this particular soup, but I did find this online recipe, which I will be using to make my own.

    Heinz Kidney Soup

    3 medium sized kidneys
    3 pints meat stock
piece of celery or a quarter teaspoon celery seed
    1 tablespoon oil
    2 cloves
    1 medium sized onion
small bunch of herbs or pinch of dried herbs
    8 peppercorns
    1 dessertspoon flour
    1 dessertspoon ketchup
    seasoning

    Method

    - Wash and dry the kidneys.
    - Remove the fat and cut into small pieces.
    - Peel and slice the onion.
    - Put the oil in a pan and when it is quite hot, add the onion.
    - Fry for 2 - 3 minutes.
    - Add the kidney and fry together until brown.
    - Stir while the stock is gradually added.
    - When boiling, remove any scum that appears on the top.
    - Add the peppercorns, cloves, herbs and celery seed tied in muslin, and simmer over very gentle heat for 3 hours.
    - Skim occasionally.
    - Strain through a sieve into a bowl and leave until cold. Reserve kidney pieces for later.
    - Skim off the fat and reheat the soup.
    - Taste to check seasoning.
    - Put back the pieces of kidney.
    - Mix the flour with the tomato ketchup , and stir into the soup.
    - Bring to the boil and stir whilst boiling for 3 minutes.
    - It is advisable to cook the soup the day before it is required, if possible, as it must be quite cold before the fat can be removed. The soup must cook slowly on the lowest heat or else the kidney will be tough.

    Happy cooking and enjoy!

    New Job!

    Picture
With both of us now working and our new house move imminent, we are now lucky enough to be in a unique position, for now at least; we are finally feeling secure, living here, a first for us both. By the beginning of December, we will be independent and  settled, something we haven't been for many years. Life seems to be heading in the right direction; although I'm not counting my chickens yet, judging on previous experience!

Yesterday, Darrell finally started his new job at the airport in Alicante. It was touch and go for a while, whether his status, would prevent him, from taking up the post. The fact he hadn't received his Residencia card, was a stumbling block. However a Spanish solicitor, managed to get the required documentation, just in time, with the provision of a pre contract. Once presented to the social security office, a social security number was issued and the final piece of the jigsaw, clicked into place!

    Nathan and Ash!

    3 October 2017

Nathan and Ash spent day two of their visit to Gran Alacant, relaxed by our pool; in the evening they both went to the beach. They do seem to be enjoying themselves, impressed with this part of Spain and all it has to offer. After work it was nice sat chatting with Nathan after so many years, we had a lot to catch up on; Nathan hasn't changed a bit, although grown up a lot, which is great to see! In truth a week with friends is never long enough; however, I know Nathan will be a regular visitor!

While the boys relaxed, I was at work......

After a rather late night at LoungeD, we said farewell to two of our favourite Scots Pete and Joan, who are returning to the UK after their holiday. I will be sad to see these two go, they have been great customers, who we have got to know well over the last few weeks; see you soon guys!

    4 October 2017

I had me first day off in over two months on Wednesday, so spent the day with Nathan and Ash, relaxing and drinking in the sun; I haven't done that in a while. Natalee met us at Zest, introducing her to these two guys for the first time. Nathan had left my life, before Natalee came along, so they never met, despite living in the same city. It felt great to be surrounded by people I have known for many years, from Southampton, a city I will always call home, living in Spain or not. Chatting about the things we used to get up to, times, long since past and memories, still fresh in the mind, if a little hazy, was a fantastic tonic for me. I still miss home from time to time, staying in contact with people helps me deal with the homesickness. When old friends and companions come to visit, my spirits are lifted in the best way possible.  It's great to have Nathan here, just like it was yesterday!

    Nathan Stephens

Nathan Stephens, a friend from back home in Southampton and his mate Ash, have arrived to stay with us for a week in Spain. I say a friend, but  Nathan is a lot more than that; we were very close, during a rather hectic time on the Southampton gay scene, experiencing the ups and downs of gay life. Nathan has moved forward in leaps and bounds it has to be said and I am pleased he is doing so well. He is another one of those gay daughters I picked up on the way through life and it is wonderful to see him, after so many years have passed. Good to have you here!

The most surprising aspect of moving to Spain for me, was the closer bonds I have with people back home; a little strange, granted, living so far away, but  as the saying goes:

'Absence makes the heart grow stronger!'

The people that  matter keep in contact, message regularly and as in the case of Nathan and others, visit often. It really is good to have friends, cherished memories and an ability to make more in Spain, as Darrell and I forge our new life together!

    Don't be a stranger!

    Sookie!

Yesterday I had a visit from Sian or Sookie as she is known on twitter. Sookie popped in to introduce herself and her husband; she is an avid reader of my blog 'Spanish Views' and it has to be said, has an opinion on most things. I enjoyed spending time with these two, putting the World to rights and hope Sookie will be able to do a guest blog about Gran Alacant. It is subscribers like Sookie, that make the long hours of blogging, worth every minute!
