Today I have made some Bread Pudding, actually quite a lot of Bread Pudding.  My Mother used to make this years ago.  I don't do it exactly the same however.  I know Mum used to put pieces of lard, yes, shock horror, lard on the top, while baking.  It used to give it a wonderful sheen and taste.  Totally out of fashion these days though. The recipe is below!

​500g Wholemeal bread
500g white bread
​800g Mixed, dried fruit
4 beaten eggs
4 tbsp mixed spice
1 litre milk
300g light brown sugar
200g butter

Break up the bread into a large bowl.  Add the fruit and 1 litre of milk; mix well, using clean hands!

Add four tablespoons of mixed spice.  Adjust to suit taste! Stir well!

Beat four large eggs in a bowl.

Add the beaten egg, to the mixture.

Melt 200g of butter, also add to the mixture and stir!

Add 300g of light brown sugar.

Stir all the ingredients in well.

Grease a 40 cm cake tin with butter.  Make sure the tin  is not one with a loose bottom.  Pour the mixture in and level the tin.  Sprinkle some more light brown sugar on the top.

In a heated oven, 180C/160C fan/gas 4, bake for 2 hours, until golden brown.

When firm to the touch, remove from the oven and turn out onto a board. Cut into squares, serve with cream or custard.

I will be freezing most of my Bread Pudding, which should be done, on the day cooked.  Wait until cool, before freezing!
